CHILI PEPPER HISTORY: Chili peppers originate in Central and South America, where they are believed to have been one of the first self-pollinating crops. Christopher Columbus was the first European to encounter chili peppers in the Caribbean. Once introduced to Europe, they were grown in the gardens of monasteries, where monks began using them in their culinary creations as a substitute for high-priced black peppercorns. Chili peppers were brought to Japan by Portuguese missionaries in 1542.

CHILI PEPPERS IN JAPANESE CUISINE: Togarashi means “red chili peppers” in Japanese. Togarashi is used primarily as a condiment in Japanese cuisine. Different chili peppers are often blended to create unique spices, such as shichimi togarashi. Shichimi togarashi is a popular spice powder, which is sprinkled on traditional Japanese dishes, such as yakitori, miso soups and noodles.
