Healthy Quinoa Salad
Light and fresh, this flavourful salad can be served as a side dish or a main course.
- 3 cups cooked quinoa
- 1 cup garbanzo beans (chickpeas), rinsed and drained
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1 cup chopped green peppers
- 2 tablespoons fresh chopped parsley
- 2 tablespoons Wafu® Ginger Carrot Japanese Dressing
- In a medium bowl, combine the quinoa, chickpeas, cucumber, tomatoes, green peppers and parsley.
- Pour the Wafu® Ginger Carrot Japanese Dressing over the salad and toss to coat evenly.
